meal ideas!

Hey everyone(the what, 5 people who read my blog :)
I need some meal ideas. Our usuals are getting kind of old. Let me know what some of your family's favorite meals are, or your favorite meals to make. Thanks!

    Tonight I made roasted butternut squash and curry soup and fresh rolls. Man it was good! I peeled and cut up into cubes: 1 butternut squash, 1 apple, 1 large carrot, and 1 onion. Mixed it on a tray with 3 TBSP olive oil, 1 tsp salt, and 1 tsp pepper. Bake in oven at 350 for 1 hour. Blended the vegetables up with 1 can coconut milk and 1 TBSP curry powder, and then added enough chicken stock to get it thin enough. Heat through and eat. mmmmm

  2. I saw the title, "meal ideas" and was kinda hoping you were sharing ideas for me to use! I'm hoping lots of people comment here so I can come get some ideas too! Lately, with all the cold we've done a lot of soups- taco soup, potato soup, chili, chicken noodle soup, cauliflower soup, cheeseburger chowder. Mostly they are really easy to put together and warm the soul! :) Enchiladas are good (white creamy sauce or red or green spicy), baked potatoes are an easy back-up, stroganoff or stir-fry, grilled chicken (marinated in italian dressing or something...), chicken pot pie, etc. Now that I've listed all my ideas, I still don't know what to do for dinner tonight! Hmm...

  4. My favorite are enchiladas! I kinda threw a few different recipes together and I dont really measure so I"ll try to give you estimates. I can forward you a bunch of recipes I have copied onto a word doc if you want to??

    Chicken Enchiladas

    (These are all abouts)
    4-5 chicken breasts cooked (I boil mine) and shredded
    1/2 yellow onion sliced thinly and cooked till soft
    1 large can of green enchilada sauce (The Las Palmas brand, u can get at wal-mart)
    1 can of cream of chicken soup
    1 1/2 cups of sour cream
    3/4 of the bunch of cilantro
    2ish cups monteray jack cheese shredded
    Uncooked tortillas from costco are my fav, but any tortillas will work.

    Put the las palmas sauce, sour cream, cream of chicken, and cilantro in blender and blend it up!

    Fill tortillas with chicken, a few onions, a little cheese, a spoonful or little more of sauce and roll it up.

    Pour enough of the blended sauce on the bottom of the pan, then fill up with the enchi's then pour the remainder of the sauce on top, cover with cheese, cover with aluminum foil then cook at 350 for 25-30 minutes.

    *Sometimes I'll put cooked black beans inside too, but lately I have just been cooking them in their own juice with about a 1/4 cup of vinegar. And eating them as a side. You have to try them cookEed this way if you don't even try the enchiladas. They're soooo good.

    I also make some rice on the stove and add about 2 tblespoons of tomato bouillon cube and a few shakes of garlic salt.

  5. Okay idea #1: Baked chicken. You crush ritz crackers and add parmesan chz season salt and garlic salt. Take the raw chkn breast smother it in sour cream or yogurt, dip it in the cracker mix and then drizzle melted butter on it. Bake at 350 for 1/2 hr covered and 1/2 hr not. enjoy.
    Idea #2 shiskebobs (spelling???) Get some skewers, and load them with stew meat chunks or chicken chunks, potatoes, pineapple or anything else you want. We pour some butter and maybe sprinkle spices on them. Add whatever you think will be good. Then bake at 350 till meat is done. roughly twenty minutes. And of course the best thing to do is have one skewer full of pineapple, dust it with cinnamon sugar and just bake till warm. Delicious!
    Also, when was the last time you had French dip, or Chicken Crescent rolls, or a chicken salad, or Bruschetta, or sloppy joe's or my favorite italian chicken? if you need any of those recipes let me know!

  6. i walk down the aisles and find different things. or when a season starts i like to try something new, for instance, its fall so i decided to try to use sweet potatoes, yam, and squash all in one meal, so i made a soup with all that. it was awesome. I usually just google my idea and then do it! tonight we had sloppy joes...
    We usually do something mexican like burritos or enchiladas, chicken and potatoes, stir fry, mexican pizza, hotdogs and mashed potatoes, hamburgers, macn cheese, spaghetti/meatballs, pancakes and bacon, salads, soups, pasta salad, etc.

  7. Cream of potato soup and bakin powder buskits , or split pea soup with bakenpowder biskets or mummas casaroll Robert should have that one in the Williams family cook book. I like the enchlada recipie that Jamie has inthe cookbook
